This white will go perfectly with sophisticated and gourmet preparations. Its richness and minerality will go well with truffle dishes. Its material also allows it to go well with spicier dishes such as a shoulder of lamb with spices.
Skin maceration for 10 days at 14 degrees (scratched, crushed). Selection only of taste juices, then fermentation in tuns and amphorae in terracotta and sandstone. Aging continues in the same containers without racking. Bottling is done without filtration or fining after 10 months.
The robe is rather pale yellow, slightly hazy. The nose is striking! It reveals notes of butter-roasted apples, apricot with a slight resinous touch (pine needle). The palate is slender, tense without being stiff, coated in a rich, pulpy, fruity substance, with a rather impressive density. No heaviness, we are rather on the sensual gluttony. The finish goes up another notch in density: it is powerful, chewy, without being tannic or astringent. The fruity and buttery notes perceived on the nose are still present on the palate with an intensity that does not weaken and which reveals a slight acidity on the finish.
Grapes from organic farming and natural yeast and low added sulfites. Unfined and unfiltered wine.
About the Domaine:
Château du Barouillet is located at Pomport, Dordogne, just 50 km inland from Saint Emilion. Made up of 45 hectares, the vineyard has been owned by the family for eight generations.
It is currently run by three generations of winemakers with Yves Alexis “Milou” (grandfather), Gérard Alexis (father) and Vincent Alexis (son), who all continue the desire to work the land as naturally as possible.
