I Wish I Was A Ninja Pet Nat 2021 - Testalonga

This is a complex and traditional sparkling Colombard. It is aromatic and laser-bright, like lemonade for grown-ups. A fresh, bright Pet-Nat with a taste reminiscent of the freshest apples and peaches, low in alcohol.

Organic Colombard grapes were hand harvested and fermented with indigenous yeast in stainless steel. Bottled before fermentation finished to create fizz (ancestral method winemaking technique) and disgorged 10 months later. No filtration, fining or added sulphur.
