A beautiful yellow-green color, a fresh nose with citrus aromas, a mineral and light palate with great structure and a hint of salinity coming from the influence of the Atlantic Ocean. The wine is aging on lees during the spring, until bottling.
Best pairing wine with oysters !
The vines average age are 35 years old, on a metamorphic, gneiss rocks soil.
About the winemaker :
In the heart of Muscadet Sèvre et Maine appellation, the Caillé family have been wine growers for 5 generations. Vincent Caillé who took over in 1986 is part of a new generation, he works the land organically since 1996 ( one of a few only).
In the cellar, he vinifies with indigenous yeast and long aging on lees to produce remarkable wines and restore the image of Muscadet.
