Made from 40-year-old Sémillon vines. Direct pressed and fermented in native yeasts in stainless steel tanks. Slightly filtrated on land when the sugar balance is reached (between 17 and 20 grams of residual sugars). Bottled after filtration as soon as the wine started to ferment again. Fermentation and aging finished in bottles for 5 months.
This sparkling wine is fresh and crisp, with flavors of citrus. Light, with only 9% alcohol. Notes of lemon, fresh apple and wheat beer. On the palate, it’s round, richly textured and bursting with freshness.
Grapes from organic farming and natural yeast and no added sulfites. Unfined and small filtration on the wine.
