Manual harvest put into small crates, destemming, 30% vinified in vats, 40% vinified in new barrique (from 1 to 4 years) for 10 months on lees and without SO2, regular stopping, 30% vinified in 25hl casks, indigenous yeasts.
This wine evolves slowly, the mouth opens with aromas of candied white fruits, and amplifies with fat. A beautiful freshness on the finish.
Perfect pairing with a fish soup, white meat as chicken with sauce, or wash-rinded cheese (Munster or Époisses). Great pairing with truffle after couple years into the cellar.

Grapes from organic farming, natural yeast and no added sulfites. Unfined and unfiltered wine.
